I was craving one of my favorite things my grandma always made me, tostadas! But traditional tostadas aren't exactly clean. So I bought some fiber/flax whole grain corn tortillas, got them crispy on the stove with some olive oil spray, topped with mashed black beans (instead of refried pinto beans), shredded chicken, and tomato slices. I had steamed veggies on the side instead of the Spanish rice I would have had in the past. This is definitely gonna get added to the dinner rotation, it was yummy and hit the spot.
